BirdsEye Vegetables + Stir Fry Recipe

Hello friends!!!
Has anyone else fallen off the meal prep train during quarantine lol?! Before COVID19 I went to the store + meal prepped every Sunday. It was what kept me on track meal wise.
Now that I’m 1/2 WFH and 1/2 in the clinic I have been slacking and I’m trying to get back on track.
This is one of my easy + quick go-to balanced meals! I created this using BirdsEye frozen vegetables #ad. I have been using BirdsEye frozen veggies forever and they are so easy to incorporate them into quick meals. Check them out online or in your local grocery store's frozen section!

Let’s get into the recipe:
Ingredients:
3 chicken breast
1.5 cups of brown rice
1 bag of frozen Asian Medley BirdsEye vegetables
Spray olive oil or coconut oil
GF Soy Sauce (1 tbsp)
Honey (1 tbsp)
Butter (2 tbsp)
Garlic Salt
Pepper
Onion Powder
Chicken Seasoning
Recipe:
Gather all ingredients!
Spray chicken breast on both sides with olive oil.
Season your chicken breast on both sides with garlic salt, pepper, onion powder, and chicken seasoning. I don’t measure seasoning tbh!
Put seasoned chicken breast into air fryer at 375 degrees for 7 minutes.
Flip chicken and continue cooking at 375 degrees for 7 minutes.
Cook rice (I just follow the instructions on the box—haha!).
Melt butter in a pan over medium heat.
Melt honey in microwave and combine with soy sauce.
Add cooked rice and chicken to melted butter.
Add 1/2 of the soy sauce + honey mixture to the rice/chicken mixture.
Cook Asian Medley BirdsEye Frozen Vegetables in the microwave! Follow the instructions on the bag for what works with YOUR microwave wattage!
Add cooked veggies + butter + remaining soy sauce + honey mixture to pain.
Combine over medium heat for 3-5 minutes so all the flavors meld together!
Eat when hot or save in the fridge for the rest of the week. This warms SO well if you add a TINY bit of butter and soy sauce before warming.

I don’t even look at the macros of this, because:
1. it tastes good
2. it is balanced (protein, veggies, carbs, fats, and oils)
3. it is quick + easy!
